Katie’s Homemade Vegetable Soup
This is pretty close to Craig’s, but with only vegetables that Katie chose/likes. Both kids ended up loving it…
Ingredients:
- 3 cans of sweet corn (not drained)
- 2 chopped potatoes
- 2 small bags of frozen peas
- 1 bag of frozen green bean cuts
- 1 bag of frozen cauliflower
- 1 small can of tomato paste
- half stick of butter
- black pepper to taste
- 1/2 tsp cayenne pepper
- 1/4 (heaping) tsp of turmeric
- garlic powder/salt to taste
- onion powder to taste
- a few squirts of ketchup
- 32 oz box of vegetable broth
- v8 juice to thickness
- optional: orzo pasta
Directions:
- Dump all ingredients into a large stew pot. Stir up as much as possible.
- Mix in juice/broth to the thickness desired.
- Cook on the stovetop until cauliflower and potatoes are soft.
- Season to taste.
