Uncle Jim’s White Chicken Chili
This is THE best chicken chili recipe!
Not the easiest to make, but well worth the effort!
Ingredients:
- 1 1/2 lbs skinless,boneless chicken breast halves
- 1 bunch green onions,thinly sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 4 fresh jalapeno chile peppers, de-seeded & minced ( leave seeds in to add heat)
- 1 clove garlic, minced
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1/2 teaspoon dried sage
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground white pepper
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 ( 14 ounce) cans great northern beans, undrained
Instructions:
- Dump chicken broth in large pot… Add chicken breasts and boil until cooked all the way through (about 30 to 45 min). Remove chicken from pot and shred chicken…
- Add the ginger, salt, sage, cumin and white pepper. Mix thoroughly.
- In a separate small saucepan, melt butter or margarine over medium heat. Stir in flour to make a roux. Add approximately half of the chicken broth to the roux slowly stir constantly. Quickly add veggies, chicken and roux to large pot.
- Stir in the beans with canned liquid.
- Bring to a boil, reduce heat and simmer with lid over low heat for at least 30 minutes. Be sure to stir often to avoid burning at bottom of pot.
