Uncle Jim’s White Chicken Chili

This is THE best chicken chili recipe!

Not the easiest to make, but well worth the effort!

Ingredients:

  1. Dump chicken broth in large pot… Add chicken breasts and boil until cooked all the way through (about 30 to 45 min). Remove chicken from pot and shred chicken…
  2. Add the ginger, salt, sage, cumin and white pepper. Mix thoroughly.
  3. In a separate small saucepan, melt butter or margarine over medium heat. Stir in flour to make a roux. Add approximately half of the chicken broth to the roux slowly stir constantly. Quickly add veggies, chicken and roux to large pot.
  4. Stir in the beans with canned liquid.
  5. Bring to a boil, reduce heat and simmer with lid over low heat for at least 30 minutes. Be sure to stir often to avoid burning at bottom of pot.
