Chunky Beef Vegetable Soup
Ingredients:
- 3 cups vegetable juice
- 2 cups hot water
- 1 lb stew beef cut in 1 inch cubes
- 8 cups frozen mixed vegetables
- 2 medium potatoes, peeled & cubed
- 1 small onion, chopped
- 1/4 cup ketchup
- 3 tbls beef flavor instant bouillon (7 chopped beef cubes)
- 1/2 tsp pepper
Directions:
- Pour vegetable juice & water in lined crock pot.
- Add beef, vegetables, ketchup, bouillon & pepper; stir gently.
- Place lid on and cook on low for 8 to 9 hours or high for 4 to 5 hours, until beef is tender.
