Cashew Chicken Bake

Directions:

  1. Preheat oven to 375(F) and spray square casserole dish with cooking spray
  2. Place brown rice uncooked in bottom of dish, then layer the celery celery and bell pepper on top. Place chicken on top of veggies
  3. In a separate bowl, mix seasonings with water, soy sauce, rice vinegar, garlic, and ginger then add to the casserole dish. Layer water chestnuts on top
  4. Bake for 45 minutes at 375(F) uncovered
  5. Remove from oven, add cashews and bake another 10 minutes
