Cashew Chicken Bake
Ingredients:
- ½ C. Uncooked brown rice
- 3 medium sized chicken breasts cut into cubes
- 1 C. diced celery
- 1 red bell pepper cut into bite size pieces
- 1 green bell pepper cut into bite size pieces
- 1 can sliced water chestnuts, drained
- ⅔ C. water
- 2 Tbsp soy sauce
- 1 Tbsp rice vinegar
- 1 Tbsp minced garlic
- ½ Tbsp minced ginger
- ½ tsp cumin
- ¼ tsp salt
- ½ tsp pepper
- 1 C. cashews
Directions:
- Preheat oven to 375(F) and spray square casserole dish with cooking spray
- Place brown rice uncooked in bottom of dish, then layer the celery celery and bell pepper on top. Place chicken on top of veggies
- In a separate bowl, mix seasonings with water, soy sauce, rice vinegar, garlic, and ginger then add to the casserole dish. Layer water chestnuts on top
- Bake for 45 minutes at 375(F) uncovered
- Remove from oven, add cashews and bake another 10 minutes
